Grilled Rib Steak Dinner with Garlic Herb Butter



Ingredients:

  • 2 rib steaks, approximately 1 inch thick

  • 4 tablespoons unsalted butter, softened

  • 3 cloves garlic, minced

  • 1 tablespoon fresh parsley, chopped

  • 1 tablespoon fresh thyme leaves, chopped

  • Salt and black pepper, to taste

  • Olive oil, for grilling

  • 4 small potatoes, washed and halved

  • 1 bunch asparagus, trimmed

  • Lemon wedges, for serving


Instructions:

  1. Preheat your grill to medium-high heat.

  2. In a small bowl, combine the softened butter, minced garlic, chopped parsley, chopped thyme, and a pinch of salt and black pepper. Mix until well combined to make the garlic herb butter. Set aside.

  3. Season the rib steaks generously with salt and black pepper on both sides. Let them sit at room temperature for about 15-20 minutes to allow the seasoning to penetrate the meat.

  4. While the steaks are resting, prepare the vegetables. Drizzle the halved potatoes and trimmed asparagus with olive oil and season with salt and pepper.

  5. Place the potatoes on the preheated grill, cut side down. Cook for about 10-15 minutes, flipping halfway through, until they are tender and golden brown.

  6. While the potatoes are grilling, grill the asparagus for about 5-7 minutes, turning occasionally, until they are tender and slightly charred. Remove from the grill and set aside.

  7. Once the potatoes and asparagus are cooked, it's time to grill the rib steaks. Brush the grill grates with oil to prevent sticking. Place the steaks on the grill and cook for 4-5 minutes per side for medium-rare, or adjust the cooking time according to your desired level of doneness.

  8. During the last few minutes of cooking, top each rib steak with a generous dollop of the garlic herb butter. Allow the butter to melt and infuse the steaks with flavor.

  9. Once the steaks are cooked to your liking, remove them from the grill and let them rest for a few minutes before serving.

  10. Serve the grilled rib steaks alongside the grilled potatoes and asparagus. Garnish with lemon wedges for squeezing over the steak, if desired.
