Ingredients:

  • 2 boneless, skinless chicken breasts, cut into 1-inch cubes

  • 1 red bell pepper, cut into 1-inch pieces

  • 1 yellow bell pepper, cut into 1-inch pieces

  • 1 red onion, cut into 1-inch pieces

  • 1 zucchini, sliced into rounds

  • 1/4 cup olive oil

  • 2 cloves garlic, minced

  • 1 tablespoon fresh rosemary, chopped

  • 1 tablespoon fresh thyme leaves

  • 1 tablespoon fresh parsley, chopped

  • 1 lemon, juiced

  • Salt and black pepper, to taste

  • Wooden or metal skewers


Instructions:

  1. In a large bowl, combine the olive oil, minced garlic, chopped rosemary, thyme leaves, parsley, lemon juice, salt, and black pepper. Mix well to create the herb marinade.

  2. Add the cubed chicken breasts to the marinade, making sure to coat each piece evenly. Cover the bowl and refrigerate for at least 30 minutes to allow the chicken to marinate and absorb the flavors.

  3. While the chicken is marinating, prepare the vegetables. Thread the marinated chicken cubes, bell pepper pieces, onion pieces, and zucchini rounds onto the skewers, alternating between the different ingredients.

  4. Preheat your grill to medium-high heat. If you're using wooden skewers, be sure to soak them in water for at least 30 minutes before grilling to prevent them from burning.

  5. Once the grill is hot, place the skewers on the grill grate and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.

  6. While the skewers are grilling, brush them with any remaining marinade to keep them moist and flavorful.

  7. Once the chicken and vegetables are cooked to perfection, remove the skewers from the grill and transfer them to a serving platter.
