Recipe: Herb-Roasted Turkey Breast with Side Dishes
Ingredients:
For the Turkey:
1 bone-in turkey breast (about 4-5 pounds)
1/4 cup unsalted butter, melted
2 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme leaves
1 tablespoon fresh sage, chopped
1 tablespoon olive oil
Salt and black pepper, to taste
For the Side Dishes:
1 pound baby potatoes, halved
2 carrots, peeled and cut into chunks
2 parsnips, peeled and cut into chunks
1 tablespoon olive oil
Salt and black pepper, to taste
4 cups baby spinach leaves
1 tablespoon butter
1/4 cup milk
2 tablespoons sour cream
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
Preheat your oven to 375°F (190°C).
In a small bowl, combine the melted butter, minced garlic, chopped rosemary, thyme leaves, sage, olive oil, salt, and black pepper to create the herb mixture for the turkey.
Place the turkey breast on a roasting rack set inside a roasting pan. Use your fingers to gently loosen the skin from the turkey breast, being careful not to tear it.
Rub half of the herb mixture under the loosened skin of the turkey breast, spreading it evenly over the meat.
Rub the remaining herb mixture over the outside of the turkey breast, coating it evenly.
Roast the turkey breast in the preheated oven for about 1 to 1 1/2 hours, or until a meat thermometer inserted into the thickest part of the breast registers 165°F (74°C).
While the turkey is roasting, prepare the side dishes. Toss the halved baby potatoes, carrots, and parsnips with olive oil, salt, and black pepper on a baking sheet. Roast in the oven alongside the turkey for about 30-35 minutes, or until tender and golden brown.
In a large skillet, melt the butter over medium heat. Add the baby spinach leaves and cook until wilted, about 2-3 minutes. Season with salt and black pepper to taste.
In a small saucepan, heat the milk until warm. Add the milk to a large pot of boiling water. Add the cooked potatoes to the pot and mash them until smooth and creamy. Stir in the sour cream and season with salt and black pepper to taste.
Once the turkey breast is cooked through and the side dishes are ready, remove them from the oven. Allow the turkey breast to rest for about 10 minutes before slicing.
Serve the herb-roasted turkey breast slices alongside the roasted vegetables, mashed potatoes, and wilted spinach. Garnish with freshly chopped parsley for a pop of color and flavor.
